Actually got home at a reasonable time last night! I decided not to stop at the grocery store on the way home (which is the norm for me) and to make some frozen fish that was already in the freezer.
Dinner:
I've been buying swai, which is cheap and (miraculously) loved by the family. Frozen fillets on a cooking sheet with a bit of butter and some fish rub is quick. While I waited for the oven to heat, I started the rice. Three cups rice, six cups water, three teaspoons salt, three tablespoons butter--I don't even need to look at the bag anymore. Put it all in the pan on the stove and bring to a boil, then put a tight lid on and let it cook on low heat while everything else gets done. Steam in a bag vegetables. I had it all cooking within ten minutes and could focus on other things. The best part is today I'll have grab-n-growl leftovers from the last two nights...lay all out on the counter and folks pick, heat, and eat. I'm definitely not one of those people who bothers "repurposing" leftovers. That's why I bought a microwave!
Family:
Hubby came home last night, a day early. That was exciting. He is usually gone out of state most of the week with his job, but he said that he should have a period of time coming up where he may only need to be gone overnight once or twice a week. I'm very excited!
Oldest Son finally got the remainder of his college application turned in (requested transcripts and SAT's). He actually applied months and months ago, but never requested these things to be sent. Since he's 18, I can't do it for him. I finally told him that if he doesn't get in until spring that is fine, but he'll need to find a full time job until then. Amazing how quickly it got done! :) He'll go to school at Public U where I work, and it isn't very competitive, and they have rolling admissions. So, he'll probably still get in for the fall.
Youngest Daughter, Oldest Daughter, and Youngest Son have nothing new to report.
Other
Exercise is absolutely something I have to start doing. Since taking this damn office job over the winter, I've done nothing but sit on my butt all day, which is especially bad since I'm overweight to begin with. However, doing chores and moving furniture up and down the stairs the other day made me realize that I've become horribly out of shape over the last four months. We're going on vacation in two months and at this rate I'll be one of those people who can't walk up a hill without being winded!
New goal--Stop being suck a lazy butt sitter. Let's see if I can get this wimpy bod moving tonight. I know hubby says he can fix the whole problem through sexercise (gotta love MEN), but I believe it will take a WEE bit more!
